Margarita Cupcakes



Hey my Sweet Vs, it's The Sweetest Vegan here. In order to memorialize my last Spring Break Today on the show, we will be making Margarita Cupcakes. Here we go. Preheat the oven to 325 degrees F and line a cupcake tin with paper liners. To a large bowl, add all purpose flour, baking powder, and salt. Whisk until combined. To that same bowl, add in melted coconut oil, agave nectar, raw sugar, lime zest, vanilla extract, almond milk, and vinegar. Whisk until there is no evidence of dry ingredients. A couple of lump are okay but you do not want to over mix it. I am using a ice cream scooper to distribute my cupcake batter throughout my tin. And, it has become a staple in my cupcake baking, so you may want to get a ice cream scoop too. Then bake the cupcakes at 325 degrees in a preheated oven for about 25 minutes. When they are done you should be able to stick a tooth pick in the center cupcake and it should come out clean. With no moist batter or anything attached to it. While those cool, we are going to make our Margarita glaze with a little lime juice, your favorite tequila or my favorite tequila, and little bit of triple sec.

 After about 10 minutes, your cupcakes should have cooled enough to be able to poke holes through the top of the cupcakes so that our glaze can seep in. I would do about 2-3 layers of the glaze on the cupcakes, just to get them good and soaked with our Margarita mixture. Next we are going to make out buttercream, which is another fun part We are going to use vegetable shortening and vegan butter. I use Earth Balance brand. Go ahead and cream those together and once they are combined you are going to add in powdered sugar. Once you powdered sugar is beat it, your buttercream should form this ugly, chunky texture. We are going to fix that up with more Margarita glaze and it is going to turn into this smooth texture that is just lovely and it is going to top our Margarita cupcakes just right. Now it is time to decorate.

Have you and your friends ever been about to take Tequila shots but one person just could not cut the lime right? Me either. But yeah if you were in that situation, just cut the lime lengthwise first then you can cut nice even slices. Have you ever had too long of straws, just kidding, but you want to cut your straws down too. I am going to do a 1M swirl on the top with a Margarita Buttercream on the top of out Margarita Cupcake Then I am going to stick a little slice of lime and a little straw in it. It is so adorable. This cupcake came out so good. I think in a non-vegan recipe your can put the liquor or lime juice right in, but it seemed to have an effect on the vegan cupcakes. I am just so happy I got it right and it taste like a Margarita but it does not taste like it is going to knock you out. Thanks for watching. Bye.
